Thursday is a one-person micro-roastery in Denver. We roast a single coffee at a time, ultra-light, in small batches, and release it as a numbered drop. When it sells out, it is gone. The next one comes the following month.
The roaster
A Sniper M1 LITE and small batches
Everything is roasted on a Kaleido Sniper M1 LITE. It holds about 200 grams, which is the whole point. Small batches let us roast to the cup rather than to a schedule, and keep every drop tasting like the coffee it came from.
We roast light. Light enough to read the origin, to taste the fruit and the florals before the roast. It asks a little more of your brewing and gives a lot more back.
The model
One drop at a time
Currently we make fewer than 50 bags in a month. That is on purpose. Rather than keep a standing shelf, we release one edition at a time, numbered and capped, once a month, always on a Thursday. Each drop gets its own colorway and its own notes.
The cap is the honest part. When a drop is gone, it is gone. The list is how regulars get in, and the archive is the record of what we have made.
How to get it
Denver pickup and local delivery
We sell direct, with pickup and delivery around the Denver metro. Under Colorado cottage food rules we can sell home-roasted coffee locally, so we do not ship across state lines. If you are in town, you can have a bag within a few days of ordering.
Order online, choose pickup or delivery at checkout, and we roast it fresh for the drop.
